Otis Beanery is a vegan food business based in Hobart, Tasmania, Australia. We teach vegan cookery, food preservation, fermentation and a variety of artisan kitchen skills through our fun and accessible workshops. Head chef Alan Whykes is a certified Vegan Fusion Level II trainer and has many years experience cooking and teaching in Australia, Indonesia, Italy and the USA. He specialises in fermented foods and has a passion for vibrant dishes that are both healthy and convenient to prepare. Additionally we provide consulting services to other food businesses looking to improve and expand their vegan range. Alan uses his teaching background to prepare innovative presentations and tastings that are ideal for schools, fairs, community events and festivals. These include: - growing and using microgreens & sprouts; - healthy eating: easy, delicious recipes that are low in added fat, salt and sugar; - edible weeds identification and use, urban foraging; - traditional cooking and food processing techniques from around the world; - probiotics you can culture at home; - dairy-free and gluten-free recipes. Otis Beanery is also developing unique product offerings in the area of edible flowers, publishing and vegan travel. We look forward to sharing the best of vegan cuisine with you. We call ourselves Otis after macrotis lagotis, the scientific name of the greater bilby or rabbit-eared bandicoot. Bilbies were once common and inhabited most of Australia but they have now disappeared from more than eighty percent of their former range. Otis Beanery is a keen supporter of bilby conservation with a portion of our profits going to assist reseach (behaviour studies) and protection (fences, predator removal). Our mascot is Lago, the handsomest bilby that ever there was! Oh, and a beanery is where people who love beans hang out :-)
